While none of these crab recipes are particularly complicated, I do have a few tips and tricks for working with crab meat. It can be a little temperamental, but with these tips up your sleeve, your recipes will turn out perfectly every time.
Avoid overmixing lump crab – If you are using jumbo lump or lump crab meat, handle it as little as possible. Large pieces of crab are delicate, and too much stirring or mixing will break them apart and take away the texture that makes them special.
Check for shells – Even high-quality crab meat can occasionally contain bits of shell. It is always worth giving the crab a quick look-over with your fingers before adding it to a recipe.
Drain well if using canned crab – Some crab meat, especially canned or refrigerated pasteurized crab, can hold extra liquid.
