Recipe Essentials

The list of simple ingredients for pumpkin waffles is a little lengthy, but they are fairly standard with the exception of pumpkin and spice blend.

  • Pumpkin purée – You want to make sure you are using actual canned pumpkin and not pumpkin pie filling. Save any leftover pumpkin puree to make pumpkin muffins!
  • Pumpkin pie spice – You can make your own or use store bought. Apple pie spice works too. 
  • All purpose flour

Variations

There are plenty of ways to make these fluffy pumpkin waffles your own. Here are a few suggestions.

  • Pancake mix – You can always use your favorite pancake or waffle mix to make the ingredient list a little shorter.
  • Mix ins – Try adding some chocolate chips or chopped nuts to the waffle batter for more texture or flavor.
  • Vegan pumpkin waffles – You can use a flax egg, almond milk and vegan butter to make these waffles vegan friendly.

I have to tell you that it’s hard to mess up waffles, but people do it all the time. Follow these tips to make the best pumpkin waffles.

  • Heat it up – Make sure you let the waffle maker heat up all the way. Don’t be impatient!
  • Crispy edges– Cook until the edges are crispy. This ensures the inside batter is not still soupy.
  • Cooking spray – Use plenty of cooking spray for an easy release.
  • Clean space – Set your waffle maker on a kitchen towel to catch any loose batter.
  • Let the batter rest – Letting the waffles batter rest for 5-10 minutes before cookies allows for fluffier texture.

Instructions

Pumpkin Waffles:

  • In a medium mixing bowl bowl, whisk or sift together the 1 ½ cups flour, 3 teaspoons baking powder, ½ teaspoon baking soda, p3 teaspoons pumpkin pie spice and ½ teaspoon fine sea salt. Set aside.
  • In a separate large mixing bowl, whisk together the 1 ⅔ cups whole milk, 1 cup pumpkin puree, 2 eggs, ¼ cup light brown sugar and melted 3 tablespoons butter, beat until well combined.
  • Gradually add the dry mixture into the wet mixture, folding gently and not ovemixing.
  • Heat the waffle iron according to appliance directions and coat generously with cooking spray.
  • Add the waffle batter according to package directions. This will vary by waffle maker and brand.

Assemble:

  • Serve immediately with syrup, candied walnuts and whipped cream.

Storage

Store any leftover waffles in an airtight container in the refrigerator. Pumpkin spice waffles will stay good for up to one week.

Can I freeze pumpkin waffles?

Sure! Freeze already cooked waffles and then pop them in the toaster when you are ready to eat them. This works best with a standard size waffle opposed to Belgium waffles. Belgium waffles can be reheated in a toaster oven or regular oven on low broil (watch closely).
