Everyone loves brownies. And who doesn’t love cookies? Why not combine the first two into a fudgy brownie treat, cookie-style, like these chocolatey brownie mix cookies?

  • Fudge brownie mix– Betty Crocker, Duncan Hines, King Arthur, and Pillsbury all produce a mix that will get you fudgy brownie results. You can also go higher-end with the Ghirardelli brand. This recipe uses an 18.4 oz box of brownie mix.
  • Coffee or espresso– prepare your favorite, light or dark roast, and add it to this cookie recipe to make it your own. Coffee helps to accentuate the natural chocolatey flavors. Use decaffeinated if serving to children… cause they have enough energy on their own! Espresso powder also works.

Ingredients

  • 18.4 ounce fudge brownie mix
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1/3 cup vegetable oil
  • 1 tablespoon water
  • 1 tablespoon vanilla extract
  • 1 tablespoon coffee or espresso optional, sub with 1 tablespoons water
  • ¾ cup dark chocolate chips

Instructions

  • Preheat the oven to 350°F and line baking sheets with parchment paper. Set aside.
  • In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the 18.4 ounce fudge brownie mix, 2 large eggs, ½ cup all-purpose flour, 1/3 cup vegetable oil, 1 tablespoon water, 1 tablespoon vanilla extract and optional 1 tablespoon coffee or espresso. Mix until no dry spots remain.
  • Fold in the ¾ cup dark chocolate chips by hand.
  • Using a tablespoon cookie scoop, place in rounded balls onto the prepared baking sheet.
  • Bake for 10 minutes or until the tops look glossy and puffy, they might appear underbaked and that is fine. Do not overbake them!
  • Remove the oven and cool for 5 minutes before transferring to a wire rack to cool fully.

Can I freeze brownie mix cookies?

Generally, chewy brownie cookies can also be stored in the freezer for eight to twelve months. Wrapping them individually in aluminum or parchment before putting in a freezer-safe bag will avoid them sticking together and having freezer burn.
