Instructions
Preheat the oven to 350°F and line baking sheets with parchment paper. Set aside.
In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the 18.4 ounce fudge brownie mix, 2 large eggs, ½ cup all-purpose flour, 1/3 cup vegetable oil, 1 tablespoon water, 1 tablespoon vanilla extract and optional 1 tablespoon coffee or espresso. Mix until no dry spots remain.
Fold in the ¾ cup dark chocolate chips by hand.
Using a tablespoon cookie scoop, place in rounded balls onto the prepared baking sheet.
Bake for 10 minutes or until the tops look glossy and puffy, they might appear underbaked and that is fine. Do not overbake them!
Remove the oven and cool for 5 minutes before transferring to a wire rack to cool fully.
