Berry Cheesecake Salad

I’m nothing if not a lover of cheesecake and this super easy berry cheesecake salad fulfills all of my cravings but doesn’t take a lot of time to make. With just a few simple ingredients, this delicious recipe comes together so quickly!

To make the sweet salad, you merely have to make a sweet, creamy base and fold in some berries. If you choose to use strawberries and blueberries, the red, white, and blue colors make it the perfect patriotic dessert for Memorial Day or July 4th. It’s also the perfect sweet side dish for a summer potluck — but the great thing is that it can be switched up so you can serve it any time of year.

These basic ingredients come together to create a dessert that tastes just like cheesecake filling.

  • Softened Cream Cheese – To make sure it’s easy to mix with the other ingredients, be sure to allow it to come to room temperature before beating. Also, make sure to use full-fat regular cream cheese.
  • Powdered Sugar – This fine sugar helps to give the dessert its silky smooth texture. 
  • Vanilla Extract – You can use a store-bought version or make your own homemade vanilla extract. You can also use vanilla bean paste instead.
  • Heavy Cream – Cream helps to thin the consistency while making the dessert super smooth.
  • Cool Whip – Whipped topping adds a fluffy texture to the cheesecake salad. You can also substitute homemade whipped cream if you prefer. 
  • Fresh Berries – These add fresh, fruity flavor and pops of color. You can use your favorite berries.

How to Make Berry Cheesecake Salad

With just a handful of steps, this easy recipe is lightning-fast to make.

  1. Beat cream cheese. Add the cream cheese to a large bowl of a stand mixer fitted with a paddle attachment (or use a large mixing bowl and an electric hand mixer). Mix the cream cheese. 
  2. Add vanilla and powdered sugar. Then, pour in the vanilla and powdered sugar and continue to beat until all ingredients are completely combined. 
  3. Add heavy cream. Keep mixing while adding the heavy whipping cream to the cream cheese mixture.
  4. Fold in whipped topping and berries. Once it has a smooth, creamy texture, use a rubber spatula to fold in the whipped topping and the berries. 
  5. Chill and serve. Transfer the creamy cheesecake mixture to an airtight container or cover with plastic wrap and refrigerate until ready to serve.

It’s easy to jazz up this super simple dessert salad. 

  • Fruit – Instead of berries use other fresh fruit like cherries, kiwi, or pineapple. And while we like to use fresh juicy berries, you can also substitute frozen fruit — sometimes this is the best way to get the freshest berries (like in the winter).
  • Chocolate – Fold in mini chocolate chips for a chocolatey take. Milk chocolate and dark chocolate will both work. 
  • Nuts – Sprinkle in crushed peanuts, almonds, or pistachios. 
  • Food Coloring – Add a little bit of food coloring to make it pink or blue for a baby shower or adjust the color for any holiday. 
  • Marshmallows – Fold in mini marshmallows for some extra sweetness and texture.

Make sure to keep this simple, sweet salad chilled to keep it fresh.
