Chocolate Bacon Jam Cookies are an unexpected cookie sandwich filled with a sweet bacon jam and then dipped in dark chocolate and sprinkled with sea salt.

  • Nilla Wafers – These cookies are perfectly sweet with a hint of vanilla and make the perfect cookie for sandwiching the bacon jam.

Perfect Pairings

I already use my Bourbon Bacon Jam in a multitude of ways. Spread on a BLT, hamburger, on a piece of bread and on top of deviled eggs. So you can imagine these cookies can be paired with just about anything!

  • Salt – I like to top these bacon cookies with a sprinkle of fleur de sel. Not only do they contribute to the sweet and salty combo, but they also add a nice crunch.
  • Seasonings – Add a splash of vanilla extract to the bacon jam for warmth, or even a sprinkle of cinnamon on top of the cookies.
  • Swaps – I like to use dark chocolate for these cookies, but you can certainly swap it for milk chocolate or white chocolate. You could even use colored melting wafers to make them festive for different holidays.
  • Sauces – If you want to take these cookies a step further, try serving them with a dessert dipping sauce like Homemade Fudge Sauce or bourbon sauce.
  • Senses – Crispy and indulgent, these bacon cookies sandwich smoky-sweet bacon jam between vanilla wafers, then dip into rich chocolate for a crunchy, salty-sweet bite that lingers.

Chocolate Bacon Cookies are an unexpected cookie sandwich filled with a sweet bacon jam and then dipped in dark chocolate and sprinkled with sea salt.

Instructions

  • Spread Bourbon Bacon Jam on 15 Nilla Wafers, sandwich with the other half to make 15 cookies.
  • Melt chocolate melting wafers in the microwave or in a double boiler.
  • Dip each cookie in the dark chocolate, tap to remove excess and place on a cooling rack to drip. Drizzle with white chocolate melted in a plastic baggie with the corner snipped. 
  • Sprinkle with fleur de sel while chocolate is still wet.
  • Allow to set in the refrigerator for 15 minutes, then keep at room temperture in an airtight container. Chocolate Bacon Jam Cookies are best eaten within 2 days.

Notes

Storage: You can store these no bake bacon cookies in an airtight container in the for up to three days in the refrigerator. Keep in mind that the cookies might become a little soggy.
Freezing: Unfortunately I do not recommend freezing these bacon cookies. The wafers will become quite soggy upon thawing. You can, however, freeze the bacon jam on its own. You can freeze bacon jam in an airtight container or plastic storage bag. Remove as much air as possible for freeze for up to 6 months. Thaw at room temperature or in the refrigerator.
