Spicy Chicken Sandwich

Who doesn’t love a good chicken sandwich recipe? A grilled chicken sandwich piled high with bacon, cool avocado, spicy chipotle aioli, pepper jack cheese and crisp lettuce, this Spicy Chicken Sandwich is always a winner!

Recipe Must Haves

Making this spicy chicken sandwich couldn’t be easier! A full list of ingredients with measurements for this recipe is available in the printable recipe card below.

  • Boneless skinless chicken breasts – You can also use chicken thighs, but then we do not suggest tenderizing and use boneless, filleted thighs. They don’t tend to top a bun as evenly as a breast though.
  • Chipotle aioli – This chicken sandwich gets heat from the chipotle pepper aioli sauce instead of breading. Custom made, you can pick just how hot you want it- make your sweat, or just a little bite. And if you don’t want the heat at all- pick one of our other aioli sauces.
  • Italian dressing
  • Lemon juice
  • Hot sauce
  • Coarse sea salt
  • Ground black pepper
  • Pepper jack cheese
  • Avocado
  • Bacon
  • Bibb lettuce
  • Beefsteak tomato
  • Sandwich rolls

What To Serve it With

Serve your spicy chicken sandwich with beer battered onion rings or garlic parmesan sweet potato fries. Perhaps even alongside a fresh green salad.

Whatever you decide to pair it with I am sure will be great. This is the perfect easy weeknight meal, but we also make it for weekend lunches sometimes. Basically it’s great for any meal!

Spicy Chicken Sandwich

This is the best Spicy Chicken Sandwich you will ever taste! Piled high with bacon, cool avocado, spicy chipotle aioli, pepper jack cheese and crisp lettuce.

Ingredients

Chicken Marinade:

Sandwich:

  • 1 avocado , pitted and sliced
  • 8 slices bacon , cooked and cut in half
  • 8 leaves Bibb lettuce
  • 4 thick slices beefsteak tomato
  • 4 sandwich rolls
  • 8 tablespoons chipotle aioli

Instructions

Make the Chicken:

  • Tenderize the 2 boneless skinless chicken breasts using the flat side of a meat mallet to make a uniform thickness. Cut them in half to make 4 equal size pieces.
  • Place the chicken in an airtight plastic bag or in a shallow marinating dish with the 1/2 cup Italian dressing, 2 tablespoons lemon juice , 2 tablespoons hot sauce , 1 teaspoon coarse sea salt , and 1/2 teaspoon ground black pepper marinating for a minimum of 1 hour, but up to overnight.
  • Heat the grill to medium-high heat, about 350°F. Spray or oil the grates to reduce sticking. Alternately, use a grill pan on the stove.
  • Remove the chicken from the marinade, discarding any excess marinade. Cook the chicken on each side for 7-8 minutes. Close the lid in between turning to ensure even cooking. Check to make sure chicken registers at 165°F.
  • Remove and allow the chicken and top with 2 slices of cheese each. Allow to rest for 5 minutes while you assemble the sandwiches.

Assemble the Sandwich:

  • Spread 1 tablespoon of the chipotle aioli sauce on each side of all of the sandwich rolls. On each roll place 2 leaves of lettuce, slice of tomato, cheese-topped chicken, 2 slices of bacon, and three slices of avocado. Top with the other half of the roll.

Notes

Chicken sizes should be about the size to fit a large bun. Depending on the the size, this might mean two large butterflied or 4 small pieces. Use your best judgement.

How to Store

You can store any leftover chicken in an airtight container in the refrigerator. Be sure to keep the bun and sauce separate until the next day when you’re ready to eat it.

Can I Freeze Spicy Chicken Sandwich?

Yes, you can! I recommend freezing the chicken separately in an airtight container, and buying fresh buns and toppings when ready to enjoy again.
