Ingredients
The ingredients in these buffalo chicken nachos couldn’t be more simple. You can even use leftover buffalo chicken dip!
- Chicken – These nachos are a great way to use up leftover chicken from other chicken recipes. I like to use a rotisserie chicken or pre-cooked chicken for sake of ease.
- Buffalo sauce – I have a great recipe for homemade buffalo sauce, but you can use your favorite store bought hot sauce to make things a little easier.
- Colby cheese – Traditional nachos have a melty cheese sauce, but no one likes soggy nachos! I prefer to shred my own cheese instead of using pre-shredded cheese.
- Blue corn tortilla chips – I like the color contrast when using blue corn tortilla chips, but you can use any crispy tortilla chips you prefer.
- Fresh jalapeno – I like my nachos on the spicier side, so adding fresh sliced jalapeno is a must! You can leave them out if you prefer.
- Fresh cilantro – You can’t have nachos without cilantro! But for those that think it tastes like soap, leaving it off won’t hurt.
- Tomato – Fresh chopped tomato adds a nice flavor and texture to these buffalo chicken sheet pan nachos.
- Avocado – I love how the creamy, coolness of avocado really balances out the spicy buffalo sauce.
- Lime – I like to serve any and all nachos with slices limes. It adds a zesty and fun twist to this easy dinner.
Variations
There are plenty of ways for you to make these buffalo chicken nachos your own. Here are a few ideas.
- Cheese – Instead of colby cheese, you could swap it with blue cheese crumbles, cheddar cheese, monterey jack cheese, mozzarella cheese or any that you prefer.
- Toppings – Feel free to add your favorite toppings! Green onions, sour cream, blue cheese dressing, ranch dressing or black beans would all be great options.
- Fresh veggies – You can always add fresh veggies on top too! Chopped celery or bell peppers would be perfect.
- Baking sheet – Instead of making these nachos in a skillet, make a larger batch on a baking sheet.
How to Make Buffalo Chicken Nachos
Even easier than buffalo wings, these nachos are ready in a cinch!
- Make chicken mixture. Toss shredded chicken in buffalo sauce.
- Layer of tortilla chips. In a large cast iron skillet, spread out blue corn tortilla chips.
- Add cheese. Top with shredded Colby cheese. Place a few inches from the top on high broil.
- Melt cheese. Allow cheese to melt, approximately 1-2 minutes. Watch carefully!
- Top with chicken. Remove and top with chicken. Turn off oven, but return pan to oven and close door for a few minutes to let chicken warm.
- Add toppings. Garnish with fresh jalapeno, cilantro, tomato, avocado and fresh lime juice.
Storage and Freezing
How to Store
Leftover nachos don’t really hold up very well. If you think you’ll have leftovers, store the elements separately in an airtight container.
To reheat, you can add the nachos to a sheet pan and rewarm in the oven.
Can I Freeze Buffalo Chicken Nachos
The chicken can be stored in the freezer for up to three months but we don’t recommend freezing any of the other ingredients.

- 1 cup chicken , shredded*
- 2 tablespoon homemade Buffalo sauce
- 1 cup colby cheese , shredded
- 4 cups blue corn tortilla chips
- 2 tablespoons fresh jalapeno , sliced
- 2 tablespoons fresh cilantro
- 2 tablespoons tomato , chopped
- 2 tablespoons avocado , diced
- 1 lime , cut into wedges
Instructions
- Toss the shredded chicken in the buffalo sauce.
- In a large cast iron skillet (or other oven-safe skillet), spread out the blue corn tortilla chips. Top with the shredded Colby cheese. Place the skillet 3-4 inches from the heating element on high broil.
- Allow the cheese to melt, approximately 1-2 minutes. Watch carefully!
- Remove and top with the chicken. Turn off the oven, but return the skillet to oven and close door for 3-4 minutes to let the chicken warm.
- Garnish with the fresh jalapeno, cilantro, tomato, avocado and fresh lime juice.
