Monster Eyeball Truffles

With three ingredients and fun Halloween sprinkles, these Monster Eyeball Truffles are a fun no bake treat to make with the kids!

These cookie monster truffles are ideal for classroom parties, Halloween dessert boards or parties. They can be made ahead of time and are freezer friendly (although don’t decorate them until after you’ve thawed!).

What You’ll Need

Gather this short list of ingredients and your creativity to make these fun monster eyeball truffles. A full list of ingredients with measurements for this recipe is available in the printable recipe card below.

  • Oreos – Regular Oreos act as the base for these truffles- I mean, who doesn’t love Oreos?? However, do NOT use double stuffed, or your truffles will be too moist and not hold their shape.
  • Cream cheese – Make sure to use room temperature or softened cream cheese in a brick form to achieve the correct consistency for mixing into the crushed Oreos. Spreadable or tub cream cheese is a different texture and too loose to hold the ball shape.
  • White melting chocolate
  • Halloween sprinkles

  • Salt – If you like that sweet and salty combo, you can certainly finish off these truffles with a sprinkle of flakey sea salt.
  • Seasonings – Try adding a flavored extract like vanilla, almond or even orange to take the flavor up a notch.
  • Sauces – If you really want something sweet, try serving these monster eyeball truffles with chocolate sauce for dipping. Or make them extra spooky with strawberry sauce for “blood.”
  • Swaps – Try different flavored Oreos. Lemon or vanilla Oreos would be delicious. Try swapping the colors or sprinkles to make for different holidays.

Commonly Asked Questions

Can I Use Another Flavor of Oreo?

Sure! Have so much fun using other varieties like red velvet, for a bloody red interior), peanut butter or even the espresso flavor.

Why Can’t I Use Double Stuff?

Too much filling throws off the consistency of the dough making it loose and the balls won’t stay formed.

Can I Use Regular White Chocolate Instead of Wafers?

You can use regular white chocolate chips, but add 2 teaspoons of vegetable shortening. White chocolate needs to be tempered and won’t be smooth if just melted.

Why Did My Chocolate Seize?

Changes are that you overheated it. White chocolate is much more temperamental than milk chocolate. If this happens, add vegetable shortening or coconut oil, a small amount of milk or butter to the mixture and heat sparingly until combined.
Chocolate can also seize if something cold and wet is introduced, such as liquid food coloring. Make sure to use gel to avoid this issue.

Why Are My Eyeballs Sweating?

Chocolate sweats, this is normal and usually caused by refrigeration and then coming to room temperature. These truffles can be kept at room temperature for up to 2 hours or chilled.

Can I make these without a food processor?

Yes—use a gallon bag and rolling pin; aim for very fine crumbs to avoid cracks.

My chocolate cracked- what happened?

There are two possibilities. First, the cookies crumbs weren’t fine enough. The second is over freezing or chilling. You can try to correct by making another batch of chocolate and re-dipping them for a second coat.

Cookie Monster Eyeball Truffles Recipe

With three ingredients and fun Halloween sprinkles, these Monster Eyeball Truffles are a fun no bake treat to make with the kids!

Ingredients

  • 24 Oreos , regular flavor NOT double stuffed
  • 4 ounces cream cheese , softened
  • 16 ounces white melting chocolate wafers
  • Halloween Sprinkles
  • Edible candy eyes
  • Green and purple food coloring gel*

Instructions

  • Line a baking sheet with parchment paper. Set aside.
  • In a large food processor, process the 24 Oreos until they are a sand-like consistency. Add in the softened 4 ounces cream cheese and pulse until all of the ingredients are combined. Scrape down the sides of the processor and pulse a few times more until a cookie dough has formed. Alternatively if you don't have a food processor; you could crush the cookies into crumbs and mix everything in a large bowl with a wooden spoon or use an electric mixer.
  • Use a small ice cream scoop or 2 tablespoon cookie dough scoop to form the cookie mixture into balls. Place on the prepared baking sheet and freeze for 20 minutes until the balls are firm and chilled.
  • Once the truffles are chilled, in a microwavable safe bowl, add 12 ounces of chocolate and heat in 30 second intervals, stirring in-between until chocolate has melted. Do not overheat, the chocolate will seize. Add in 3-4 drops of green food coloring and mix until desired color.
  • Dip the truffles in the melted chocolate using a fork and coat both sides. Scrape any excess chocolate off the sides of the bowl. Return the truffles to the baking sheet and let them sit for a few minutes, in the meantime, in a separate microwavable safe bowl, add the remaining chocolate wafers and heat in 30 second intervals, stirring in-between until chocolate has melted. Add in 3-4 drops of purple food coloring and mix until desired color.
  • Drizzle the top with purple chocolate (or remaining green chocolate, or both), add a Edible candy eyes or eyes to the center and sprinkle tops with Halloween Sprinkles while still tacky.

Notes

*It is important to use gel to prevent the white chocolate from seizing. 
How to Store: 
Because these monster eyeball truffles are made with cream cheese, I recommend storing them in an airtight container in the refrigerator.
Can I freeze These?
Yes, you can freeze these truffles. Place them on a baking sheet in a single layer to freeze initially, then transfer them to an airtight container or freezer bag. They can be stored in the freezer for up to 2-3 months, and you can thaw them in the refrigerator before serving. I do not recommend decorating them until they’ve thawed.
