This idea came from watching The Best Thing I Ever Ate on the Food Network. The recipe in that episode has been in my mind for over a year but it never came to fruition.

The opportunity to prepare a Cookie Bomb finally presented itself after the holidays this year. (Thank goodness!)

My mother brought us two types of cookies for Christmas both chocolate chip cookies and butterscotch chip cookies. My sister, her boss, and her friend’s brought even more varieties of cookies with them as well. It was cookie overload; a cookie bomb if you will.

While they were all delicious, we ate more cookies than any one person should eat in an entire year. And as hard as we tried, it was impossible to finish them all as is.

The recipe I had seen on TV came from a bakery that used a combination of cookies, all day-old, in a trifle. The key to making it delicious was to actually use slightly stale cookies.

This would mean they would soak in all the moisture and flavor from the layers of vanilla custard and whipped cream.

A trifle is popular in English cuisine and traditionally features some sort of sponge or ladyfingers soaked in sherry or a fortified wine that is then layered between custard and whipped cream. This recipe swaps the sponge out and swaps the cookies in.

No leftover cookies at your house? No worries, you can always whip up a batch or buy some at the local bakery. I would let them sit out a day or two if you have the time to do allow them to.

Not in the mood to make a homemade batch of vanilla custard? Buy a few boxes of instant french vanilla pudding. No time for fresh whipped cream? Visit the frozen food section of your grocer and pick up a tub.

There is no wrong way to make this Cookie Trifle recipe. Use whatever kind of cookies, custard, or whipped cream that you want. I can guarantee whatever combination you decide on, it will turn out delicious.

One thing I do strongly recommend is letting this trifle sit for at least an hour if not longer. This will allow everything to really come together which will make every bite that much more enjoyable.

I also learned that photographing a trifle dish at night with no natural light is impossible. Now you know!

  • In a trifle dish or large glass bowl, place a layer of chocolate chip cookies covering the bottom. Spread a layer of vanilla custard and then whipped cream. 
  • Next, layer with butterscotch chip cookies and repeat vanilla custard and whipped cream. Continue this pattern until you are all out of cookies!
  • Cover tightly with plastic wrap and refrigerate for a minimum of an hour, but up to 12 hours before serving.

  1. Yum! Great idea. Would this also work with cookies that were a little too “well done”, do you think? May be too dry to just eat, but with the custard and cream….
