Zucchini is a common vegetable that falls into the summer squash variety.
What is Zucchini?
Easy to grow and harvest, they are one of the most common vegetables in home gardens. They can be grown in a pot, on a trellis, in hot sun or even in shade. They are verstile and totally easy for those who don’t have a green thumb, like me.
Courgette is another name for these oblong veggies. Most are picked when immature at about 8-12 inches of length, but if left to grow unharvested, they would reach nearly 3 feet. Imagine how big of a zucchini boat that is!
This veggie has already been popular but gained even more popularity with the rise of low carb diets. Hello, zoodles. The vegetable’s answer to eating pasta. Zucchini boats, zucchini noodles, zucchini tots and even riced zucchini are all common uses.
Even zucchini flowers, also known as squash flowers are deliciously edible, although there is a relatively short harvest period so jump on it fast if you see them.
My favorite way to eat them is stuffed with soft cheese, battered and fried. They also taste great in salads.
Can I Eat Raw Zucchini?
Zucchini can be eaten raw or cooked, although most people probably prefer it cooked. It is green and not the same as yellow squash, which is a totally different veggies.
