Ingredients

chicken breasts
trimmed of fat and cut into 1-inch pieces

cup
baby spinach
packed

garlic cloves
minced
1
onion
cut into eighths

ounces
white mushrooms
sliced

cup
grape tomatoes
quartered
1
zucchini
roughly chopped
1/2
cup
white wine
1
teaspoon
fine sea salt
1
cup
dry couscous
fine or medium grain
1/2
cup
Italian dressing

Instructions
Preheat oven to 400 degrees.
Lightly coat a glass 9x13 baking dish or a large casserole dish with cooking spray.
Combine all ingredients in baking dish and mix well, spread out evenly.
Bake for 30 minutes or until chicken juices run clear when punctured. Turn off oven and remove dish.
Remove, fluff with a fork and allow to rest for 5 minutes before serving.
