These Crock Pot Pork Chops are the perfect family dinner. Super tender, cooked in BBQ sauce and a special spice rub, then smothered with bacon and cheese!
In a small bowl, stir together the 1 tablespoon brown sugar, 1 1/2 teaspoon kosher salt , 2 teaspoon ground black pepper1 teaspoon garlic powder, 1 teaspoon smoked paprika, 2 teaspoons chili powder, 1/2 teaspoon cumin1 teaspoon ground mustard1 teaspoon celery seed. Rub both sides of the 4 boneless pork chops with all of the dry rub and set aside.
In a different small bowl, whisk together the 1 1/2 cups BBQ sauce1/2 cup chicken broth, beer or water. Set aside.
Spray the slow cooker with cooking spray or line with a crockpot liner. Add the pork chops, then pour the liquid pour over BBQ sauce mix and top with te sliced 1/2 white onion.
Cook pork chops on HIGH for 4 hours or LOW for 7 hours. Do your best to not overcook the pork chops.
After pork chops are cooked, place on a baking sheet. Pour over some of the BBQ sauce from the crockpot and broil the ribs for 5 minutes on high, or until the sauce is caramelized.
Top with the crumbled 1/2 cup bacon, shredded 1 cup cheddar cheese and parsley, if you are going fancy.

Sticky Chops: If you are wanting your chops to have some sticky-ness to them you can broil them.Once the pork chops have cooked in the slow cooker, remove them and add to a baking sheet. Pour over some of the BBQ sauce from the slow cooker and broil the chops for 5 minutes until the sauce is caramelized.
