Chile Garlic Potatoes are an easy potato side dish using baby potatoes in a sweet and spicy sauce.

  • 1 1/2 pounds baby golden potatoes , washed
  • 1 tablespoon Kosher salt
  • 1 heaping tablespoon cornstarch
  • 1/3 cup water
  • 2 garlic cloves , finely minced
  • 1 teaspoon vegetable oil
  • 1 tablespoon soy sauce
  • 1 teaspoon seasoned rice vinegar
  • 1/4 cup Sriracha
  • 1 tablespoon brown sugar
  • scallions , for garnish

  1. Fill a medium-large saucepan 3/4 of the way with water. Bring to a rapid bowl.
  2. When boiling, add salt, then potatoes.
  3. Meanwhile, combine water and cornstarch in a small bowl, set aside.
  4. Boil until potatoes are easily pierced with a fork, approximately 12 minutes. Times will vary based on size of potatoes.
  5. Drain, set aside.
  6. In the same saucepan, over medium heat, add vegetable oil and garlic. Since the pan and burner are still hot, garlic should brown fairly fast, approximately 1 minute.
  7. Add soy sauce, seasoned rice vinegar, Sriracha and brown sugar until a paste forms.
  8. Whisk in cornstarch water until sauce becomes thick and sticky. It will resemble ketchup.
  9. Add potatoes back in, tossing to coat.
  10. Transfer to serving dish and garnish with fresh scallions.
