Lemon Chicken with Zucchini is a meal with classic, all-American flavors perfect for even the pickiest of eaters. Serve with long grain wild rice for a full meal.
Preheat oven to 350 degrees. Heat large cast iron skillet or oven-safe pan over medium-high heat.
Season chicken with fine sea salt and freshly ground pepper.
When cast iron skillet is hot, add olive oil, then seasoned chicken. Cook chicken on both sides for approximately 5 minutes each, or until browned.
Lay lemon slices directly on top of chicken pieces. Add white onion and zucchini slices around the chicken. Dot butter cubes evenly over vegetables. Continue to cook for an additional 5 minutes on the stove top.
Place the entire pan into the oven. Bake for 15 minutes or until vegetables are softened, but still hold their shape. Chicken should register at an internal temperature of 165 degrees. Allow to rest for 5 minutes before serving.
Serve over wild rice or other starch.
