Ingredients

  • 1 spring mix salad
  • 4 tablespoons red onion thinly sliced
  • 4 tablespoons shredded carrots
  • 3/4 cup grape tomatoes quartered
  • 1 cup dried cranberries
  • 1/2 cup mozzarella cut into small pieces
  • 4 tablespoons slivered almonds
  • 20 large shrimp cooked, shelled and deveined
  • Dijon Vinaigrette Dressing

Instructions

  1. Evenly divide all salad ingredients between four salad bowls, lettuce through shrimp.
  2. Serve! I highly encourage you to get a bite of dried cranberry, cheese and almond in almost every bite, it is heaven!
