Creamed onions made with tender frozen pearl onions simmered in a silky sherry cream sauce. This easy holiday side dish is perfect for Thanksgiving or Christmas and takes the pain out of peeling pearl onions.
In a small saucepan over low heat, combine the 14.4 ounces frozen pearl onions, 1/2 cup low-sodium chicken broth, 2 tablespoons sherry1 bay leaf and 2 teaspoons fresh thyme leaves. Bring to a low simmer and allow onions to thaw, approximately 5-6 minutes. Stir occasionally.
In a small bowl, whisk together the 1/3 cup heavy creamand 1 tablespoon flour. Combine with the onions mixture, stirring until no streaks are left.
Continue to simmer on low heat for 3-4 minutes.
Remove from the heat and stir in the 1/2 teaspoon coarse kosher salt and 1/4 teaspoon ground black pepper. Remove and discard the bay leaf.

Make-Ahead: If you’re prepping meals for the week, or you’re having guests over, you can make these onions ahead of time. They will probably be at their freshest for a couple days, but they will last up to a week.Freezer: They freeze surprisingly well. Cool completely, transfer to a freezer-safe container or bag, and freeze for up to 3 months. Thaw overnight in the fridge, then reheat slowly with a little extra cream if the sauce is too thick.
