Lightly flour a clean work surface and then layer both of the pie crusts on top of each other. Using a rolling pin, roll out to a 17x12 inch rectangle.
Transfer the pie crust into a 15x10 rimmed baking sheet, pressing the dough into the corners. Fold over excess dough along te edge to make a rustic edge.
Spread the apple pie filling into the baking sheet.
In a medium mixing bowl, combine the flour, brown sugar, oats, pumpkin pie spice, salt and butter. Using a pastry cutter or two forks., press the mixture together until crumbly.
Evenly sprinkle over the top of the pie.
Bake for 40-45 minutes or until the edges of the crust are a golden brown.
Remove and allow to rest for at least 15 minutes before serving.
Top with caramel sauce, whipped cream or ice cream to serve.
