Set the rack to the middle of the oven and preheat to 250°F.
While the oven is heating, break the bread down into small pieces. 1” by 1” will do. If it is a dense bread (sourdough, country loaf, etc), try to break it down into half that size. This will help the food processor create a better sized crumb.
Grab the food processor and give the chunks of bread a few blitzes until the desired crumb size has been reached.
Spread the breadcrumbs out on a baking sheet in an even layer and bake until golden brown, approximately 20-30 minutes. Keep an eye on them as they are cooking and toss as needed.
