Caramel Apple Cookies are the easy and mess free way to enjoy caramel apples! Apple spiced cookie dough stuffed with gooey caramel is the best apple cookie recipe you will ever taste!
Sift or whisk together the 3 1/2 cups flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1 teaspoon ground cinnamon and 1/2 teaspoon fine sea salt. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl using a hand held electric mixer, cream together the softened 1 cup unsalted butter and 1 cup sugar. Add the 2 eggs and 1 teaspoon vanilla. Slowly, one packet at a time to avoid an apple cider dust bomb, blend in the 1 box Instant Apple Cider Drink Mix (I'm telling you this from experience).
Half and cup at a time, add in the dry ingredient mixture. Cover with plastic wrap and chill for 1-2 hours.
Unwrap all of the 12 caramels and put in a small bowl, cutting in half using kitchen shears. Line the cookie sheets with parchment paper. Preheat the oven to 350°F.
In a small bowl combine the 1 cup sugar and 1 tablespoon pumpkin pie spice for the cookie roll.
Spoon out approximately 1 tablespoon of the cookie dough, roll into a ball and smash flat in the palm of your hand. Place a 1/2 caramel piece in the center and roll tightly around to prevent any holes. Roll the cookie dough ball in the spiced sugar and place 2 inches apart on the lined cookie sheet. Repeat with the rest of the cookie dough, placing it back into the fridge to chill between batches.
Bake for 11-14 minutes, cookies will look slightly undercooked. Allow to cool for 5 minutes before transferring to a cooling rack.
