Mexican Refried Beans

Mexican Refried Beans are an easy homemade refried bean recipe using pinto beans, green chilies, cheese and Mexican spices. Ready in just 15 minutes!
- 2 15- ounce cans Luck’s Pinto Beans , undrained
- 1 tablespoon vegetable oil
- 3 garlic cloves , minced
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
- 4.5 ounces canned green chilies , drained
- ¾ cup cheddar cheese , shredded
Heat vegetable oil in a heavy bottom sauce pan. Add minced garlic, cumin and cayenne pepper. Sauté for 1-2 minutes or until fragrant.
Add both cans of Luck’s Pinto Beans, heat for 3-4 minutes.
Using a potato masher or large fork, mash beans well until desired consistency.
Fold in green chilies and shredded cheddar cheese.
