Ready? Here we go... heat butter in a large skillet or saute pan over medium heat. Divide cheese evenly between two slices of bread and place into hot pan. Press down to sear and toast evenly. When browned, flip.
If your cheese is having trouble melting because you have a seriously large sandwich, don't worry. Just heat the broiler, gently open up your sandwich and place under the broiler, cheesy side up until melted.
Remove from broiler or saute pan and open up your grilled cheese sandwich. Divide all ingredients in half, bacon, guacamole and tomato, place on top of the cheese. Spritz the inside of each with a lime wedge. Put the bread slices back together and press down lightly to marry, but not enough to push your guacamole out the sides.
Cut in half, grab a napkin and enjoy your Bacon and Guacamole Grilled Cheese Sandwiches!
