In a small bowl, combine the garlic, parsley, white vinegar and salt. Spread in bowl so the top is flat.
Pour the olive oil over top until it is covered by olive oil.
Cover and marinate for 3-4 hours before serving.

Adapted from The Stinking Rose. If you want to reduce the potency of garlic flavors, allow the chopped garlic to steep in a small bowl of lemon juice for 15-30 minutes before proceeding with the recipe.
