Ingredients

Peanut Satay Sauce:

  • 1 tablespoon fresh ginger , grated
  • 1 clove garlic , finely minced
  • 2 tablespoons Lee Kum Kee Panda Brand Premium Soy Sauce
  • ½ cup creamy peanut butter
  • 1 tablespoon lime juice
  • 2 teaspoons light brown sugar
  • Thai Chicken Pizza:
  • 1 cooked pizza crust*
  • ½ cup chicken , cooked and shredded
  • 2 tablespoons roasted red pepper , diced
  • 2 tablespoons carrot , shredded
  • 2 tablespoons celery , chopped
  • 2 tablespoons red onion , thinly sliced
  • 1 tablespoon scallions , chopped
  • 1 tablespoon cilantro , leaves only
  • 1 tablespoon honey roasted peanuts , chopped
  • Lee Kum Kee Chui Chili Oil
  • Fresh lime wedges

Instructions

  1. Preheat oven to 300 degrees.
  2. If using pizza dough, place on a preheated pizza stone. If you using a hearty premade crust, you can place directly on the rack or on a baking sheet.
  3. Place all ingredients for peanut satay sauce in a small food processor and pulse several times until it all comes together. If it is super thick, add 1 tablespoon of water. Consistency should be thick enough to spread without being runny.
  4. Spread peanut satay sauce evenly over pizza crust. Top with shredded chicken, roasted red pepper, carrot and celery. Bake for 10 minutes, or until top is starting to brown.
  5. Remove and evenly sprinkle scallions, cilantro and honey roasted peanuts over pizza.
  6. Lastly, drizzle with Lee Kum Kee Chiu Chili Oil and spritz with fresh lime wedges. Serve and enjoy!
