Western Egg Muffins Recipe- make ahead and portable, these Western Egg Cups are easy to make and perfect for feeding a crowd, even let the kids make their own!
Preheat oven to 350 degrees. Line 8 muffin tin molds with squares of parchment paper. Coat lightly with cooking spray.
Use 2 slices of ham per tin, overlapping them to form a cup liner, much like a cupcake liner.
Sprinkle a pinch of cheese, green pepper, red pepper and onion into the wells of each muffin mold.
Crack and pour one whole egg into each of the 8 muffin molds.
Top with a pinch of green pepper, red pepper and onion (no cheese just yet).
Bake for 10-12 minutes. Remove and top with cheddar cheese. Return to oven for 3-5 minutes or until cheese it melted, egg whites are no longer opaque and yolks are your desired runniness.
