Ingredients

  • 12 slices deli ham , thinly sliced
  • 12 eggs
  • cooking spray
  • chimichurri sauce
  • fine sea salt
  • freshly ground pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly spray each well of a muffin tin with cooking spray.
  3. Folding each piece of ham, place into the well like a muffin liner would be.
  4. Crack one egg in each well and season with fine sea salt and freshly ground pepper.
  5. Bake for approximately 10-12 minutes or until eggs are done to your liking.
  6. Meanwhile, prepare fresh chimichurri sauce.
  7. Remove eggs when cooked to your liking and spoon fresh chimichurri sauce over the top. Enjoy!
