Red Beans

What You'll Need:

– dry red beans – vegetable oil – yellow onion  – garlic cloves – green bell pepper  – red bell pepper  – celery –chicken broth – dried bay leaves – flat leaf parsley – brown sugar – bacon  – hot sauce – fresh thyme – cayenne pepper –salt and pepper – fresh sage   – smoked andouille sausage –long grain rice cooked – scallions for garnish

Add red beans to bowl.

Cover beans with boiling water.

Let soften for 3 hours.

Saute onions.

Add garlic, peppers and celery.

Add beans.

Pour in broth.

Add seasonings, brown sugar and bacon.

Cover and simmer for two hours.

Stir in sausage and cook for 30 minutes.
