Chicken Cutlets
What You'll Need:
plum tomatoes garlic olive oil kosher salt & pepper fresh basil chicken cutlets flour nutmeg eggs bread crumbs Parmesan cheese balsamic reduction baby spinach
Toss tomatoes, garlic & basil with olive oil.
Roast & roughly chop. Set aside.
Toss chicken in seasoned flour.
Then beaten egg.
Then bread crumbs & parmesan.
Fry in a neutral oil.
Drain on a wire rack.
Plate over spinach & top with tomatoes & balsamic sauce.
