    Grilled Shrimp – Thai Style is an easy dinner idea that the whole family will love! A great, healthier alternative that uses lighter ingredients but is still packed full of amazing flavors! You can even get the kids involved by having them join in threading the skewers. Everyone will enjoy these delicious grilled shrimp skewers!

    Summer may be coming to an end and I don’t want to see it go! I love summer fruits, balmy evenings and flip flops. Luckily, hubby likes to grill year round, so at least I don’t have to forgo my love for food on the grill.

    Shrimp on the grill is one of the quickest meals you can make. Taking only 8 minutes, it will take longer to light and heat than it will to cook!

    These grilled shrimp kabobs are also super healthy. Low in calories, I used light coconut milk to add moisture (you don’t want your grilled shrimp to get dried out!) and lime juice for flavor.

    The other key ingredient is Thai Seasoning. While you can easily buy a bottle at the grocery store, I like to make my own. If you have a spice grinder (or coffee grinder) it comes together in just five minutes.

    The only ingredient that can be a little tricky is dried lime leaves. You can omit these, find them at an Asian grocery store or get them from Amazon. They are also used a lot of curry recipes, Asian dishes and will stay good for a long time, so don’t fret on how you will use them.

    Ingredients
    • 1 pound large shrimp peeled and deveined
    • 2 tablespoons Thai seasoning
    • 1 cup light coconut milk
    • 1/3 cup lime juice
    • 2 tablespoons cilantro coarsely chopped
    • Maldon sea salt for finishing
    • 6 thick skewers soaked in water for 30 minutes
    • Coconut Lime Rice
    Instructions
    1. Combine shrimp, Thai seasoning, coconut milk and lime juice in a large airtight plastic bag. Marinate for 1-12 hours.
    2. Remove shrimp from marinade and thread through skewers, dividing evenly.
    3. Heat grill to medium-high heat and oil grates.
    4. Grill for 2-4 minutes on each side, or until shrimp lose their opacity.
    5. Remove from heat, sprinkle with cilantro and Maldon sea salt. Serve with Coconut Lime Rice.
