The season for pumpkin butter is upon us! It seems like at the stroke of midnight on September 30th every recipe magically changes to “pumpkin spice” something. The irony is that most of these recipes are just that, a spice mix, not even actual pumpkin!
Pumpkin butter is actually made with pumpkin. Real pumpkin puree folks. WOW! It also uses a homemade pumpkin spice mix and doesn’t contain any actual butter. When you think about it, it is more of an apple sauce type of consistency than actual butter. Unless you add enough sugar that essentially becomes a jam, but don’t do that. It is silly.
Pumpkin butter has a unique texture that is smooth, but if made from real pumpkin, will be a little grainy. Throw is in the food processor for a spin if you really want it to be smooth. After it is complete, serve it on English scones, pancakes, waffles, toast, baked sweet potatoes really anything that needs a good slathering of deliciousness.

Place all ingredients in a heavy bottom sauce pan. Heat over medium-low until bubbling.
Stir well and reduce heat to low. Continue to stir and simmer for an hour.
Mixture will have some texture, place in a food processor to make it smooth, if desired.
