Tools for making Herb Garlic Pork Tenderloin:
- 1 Smithfield Marinated Roasted Garlic & Herb Pork Tenderloin
- 1 cup baby carrots I used tri-colored
- 3/4 cup asparagus cut into 1 inch pieces
- 2 cups brussels sprouts trimmed and halved
- 2 cups fingerling potatoes halved lengthwise
- 1 shallot thinly sliced
- 1/2 cup red wine vinegar
- Fine sea salt & pepper
- Cooking Spray
- Long Grain & Wild Rice cooked
Preheat oven to 425 degrees. Lightly coat a large rimmed baking sheet with cooking spray.
Toss all vegetables in a large mixing bowl with red wine vinegar.
Place Smithfield Marinated Roasted Garlic & Herb Pork Tenderloin in the center of the baking sheet. Arrange vegetables around tenderloin. Season vegetables with fine sea salt and freshly ground black pepper.
Place in oven and reduce temperature to 400 degrees. Roast for 20-22 minutes or until pork registers at 145 degrees at it thickest point.
Remove and allow to rest for a few minutes before cutting. Serve over Long Grain & Wild Rice.
